OUR CHEESES

HACIENDA GUIJOSO D.O. Manchego cheese is made from the milk of our pure-bred Manchegan ewes on our own farm.

All of our ewes undergo the strictest genetic selection process which, as part of AGRAMA (the largest association in the world for Manchegan ewe livestock), conforms to the very highest standards of quality. One of the keys to cheese quality is the quality of the milk used. Two factors play a role in this: firstly, the breed of the ewes, and secondly the food eaten by the ewes. At Pago Guijoso, the food eaten by our ewes is produced naturally and organically and consists mainly of a diet rich in protein and fats, such as ryegrass, corn, wheat, barley, peas, broccoli and cauliflower.

Once we have obtained the highest quality milk, our D.O. Manchego cheese is made in the time-honoured traditional manner, the essence of which has been inspired by the master cheesemakers of old, as we seek to bring out the quality of the raw material in the final product.

The second and the most important stage in the making of our cheese is the ageing process or “affinage”. The world’s greatest cheeses have been traditionally aged underground on wooden boards in conditions of natural humidity and temperature. However, we have taken this process one step further: in addition to ageing our cheeses in a specially-designed underground cave, we also leave them to rest on sabina wood boards. Sabina wood is of unparalleled quality both in terms of resistance and in its unmistakeable aroma. This latter quality confers superb elegance to our cheeses, making them the best artisanal farmhouse Manchego cheeses in the world.

GRAN RESERVA AGED 12-13 MONTHS Aged at least 12 to 13 months.

Queso con denominación de origen protegida elaborado con leche cruda de oveja de nuestra propia ganadería. Su Bouquet es espectacular con un retrogusto intenso y largo sabor. Recuerda a notas de caramelo y nuez, un queso madurado en cueva sobre madera de sabina. Su Bouquet es espectacular con un retrogusto intenso y largo sabor. Da notas tostada de chocolate, cuero y especias. Destaca su mantecosidad y su sabor elegante.

AGED 9-10 MONTHS Aged at least 9 to 10 months.

Queso con denominación de origen protegida elaborado con leche cruda de oveja de nuestra propia ganadería de color amarillento con una textura firme y un sabor penetrante, un queso con muchísima personalidad con notas a madera de sabina, cítricos y algo de aceituna, que al probarlo mostrara lo auténtico de un queso curado en cueva.

SEMI-AGED 6-7 MONTHS Aged at least 6 to 7 months.

Queso con denominación de origen protegida elaborado con leche cruda de oveja de nuestra propia ganadería, con pasta mantecosa y ligeros toques ácidos, con cierto sabor a nata y una textura muy agradable en boca. Da notas muy atenuadas y más afrutado.

SEMI-AGED, MEDIUM-AGEING 3-4 MONTHS Aged at least 3 to 4 months.

Sabor intenso con retrogusto suave que recuerda a frutos secos (nueces, almendras, avellanas, etc). Su color es marfil con pocos ojos. Queso con denominación de origen protegida elaborado con leche cruda de oveja de nuestra propia ganadería.
